Bacon and Egg Fried Rice

  1. Hello here is a recipe I recently came up with while trying to make something from whatever was left in my cupboards!

  3. Bacon and Egg Fried Rice

  5. Ingredients:

  7. 1 TBSP cooking oil (any sort)
  8. A few slices of bacon, some bacon "bits" or a third of a can of "bacon grill"
  9. 1 medium sized red onion (normal onion will do)
  10. 125g rice (I used boil-in-the-bag)
  11. 2 small or 1 large egg(s)

  13. Start the rice cooking in some salted water, bring to the boil then simmer for 10-12 minutes or so (or follow the packet instructions).

  15. While the rice is cooking, chop up your bacon and the onion into small pieces and gently fry in the oil at a medium heat for a few minutes. If you time it all right the rice should be ready, add this to the frying pan and quickly break the egg(s) over the whole lot and stir well to mix it all together.

  17. This will serve one person as a main meal or snack but you could use it as a side for a main meal for a few people.

  19. Vegans or vegetarians might want to leave out the egg and try replacing the bacon with soya / quorn or a chopped root vegetable like potato or carrot and perhaps adding some herbs and spices.

  21. Update:
  22. After further discussion with a vegan friend it might be worth editing my recipe suggestion to offer mushrooms as a replacement or possibly the root veg marinated in a rich sauce.
